In Bari, it is common to see grandmothers, or "nonnas," sitting outside their homes or in small groups, skillfully shaping orecchiette by hand. They use a simple technique, where they roll small pieces of pasta dough into a rope-like shape, cut them into small segments, and then press the segments with their thumbs to create the characteristic concave shape.
The process of making orecchiette is often a social and communal activity, where family members and friends come together to help. It is a tradition that has been passed down through generations, with the older women teaching the younger ones the art of orecchiette making.
